Nils Chili - 1st Place 

  • 2 pounds of lean beef chunks, diced small

  • 12 ounces of onions, diced

  • 3 cloves of garlic, minced

  • 1 ounce vegetable oil

  • 1 pint beef stock

  • 8 ounces tomato paste

  • 4 ounces green chiles, diced

  • 1 jalapeno pepper minced

  • 1 ounce of chili powder

  • 2 tablespoons ground cumin

  • 1 tablespoon dried oregano

  • 12 ounces tomato concasse (diced tomatoes)

  • 12 ounces cooked pinto beans

  • Salt to taste

Brown meat in oil. Add onions and garlic; cook until soft. Add beef stock and tomato paste and bring to boil. Reduce to simmer and cook 1 hour with cover on. Add remaining ingredients and simmer 1 more hour, stirring frequently. Adjust seasoning.
