WINNING RECIPE 2006

2 pounds of lean beef chunks, diced small

12 ounces of onions, diced

3 cloves of garlic, minced

4 ounces green chiles, diced

2 tablespoons ground cumin

1 tablespoon dried oregano

12 ounces tomato concasse (diced tomatoes)

12 ounces cooked pinto beans
-
Brown meat in oil. Add onions and garlic;
cook until soft. Add beef stock and tomato paste and bring to boil.
Reduce to simmer and cook 1 hour with cover on. Add remaining
ingredients and simmer 1 more hour, stirring frequently. Adjust
seasoning.
